Kharyn is correct. When speaking about food "chicken" is the general term. "Hen" and "Rooster" would only be used in a situation (like a farm) where gender was important

The difference between a hen and a chicken is that a hen is the adult female chicken, while the name chicken is a general term for the birds either female or male. The male chicken is called a rooster and it is usually big in size. The hen is the one responsible for laying the eggs that are used for hatching.
