Also! Ich will kein Deutsch lernen, sondern Griechisch. Ich will kein Deutsch lernen, aber Griechisch. Can aber replace sondern? Maybe sondern is preferable, but is the sentence with aber wrong?

In a grammatical sense the ’aber’-version isn’t wrong.

But one should keep in mind, that the phrase ’Ich will kein Deutsch lernen’ is an ambiguous negation. The ’nicht’ might refer to ’Deutsch’ as it might refer to ’lernen’. Usage of ’sondern’ releases the ambiguity better. The speaker doesn’t refuse to learn but to learn german.

”Ich will kein Deutsch lernen, sondern Griechisch.” is better, a German would say so. ”Ich will kein Deutsch lernen, aber dafür Griechisch.”, could one say also. ”Aber” is here in the sense of ”men instead of German...”
