From what I’ve seen, ”buy opportunity” tends to be used for very short term possibilities for purchase. ”buying opportunity” is more often used for the opportunity to acquire something over time. It makes logical sense.

Generally, gerund forms like ”buying” tend to form adjectives which have a continual aspect in their meaning.
