All trees are green means all trees in this world that have ever existed are green.
All the trees are green means you are referring to particular trees, either pointing or in your area i. e. “Look. It’s spring. All the trees are green. “
All of the trees are green means you are speaking of a particular set of trees, either in an area or a particular climate. It is very similar to All the trees are green.

    The question is not about the color itself, but it is about the meaning when we say ”All”, ”All the”, and ”All of the” whatever comes after.
    For example:-
    All books are in English.
    All the books are in English.
    All of the books are in English.

    The point here is neither books nor their language, but it’s when to use ”All”, ”All the”, and ”All of the”.
